These Blender Spinach Waffles are made with wholesome ingredients like almond flour, spinach, banana, and Greek yogurt—all blended into a smooth, vibrant batter! These Blender Spinach Waffles are a hit any time of year, but they’re especially fun around holidays that celebrate all things green—think St. Patrick’s Day, Earth Day, or even Halloween! They’re a great way to add color and veggies to your toddler’s plate without food coloring, and the festive green hue makes them feel extra special (with zero effort from you!).

  • banana
  • eggs
  • Greek yogurt

  • maple syrup or honey (optional for sweetness)
  • baking powder

Instructions

  1. Preheat waffle iron – Lightly grease if needed.
  2. Blend ingredients – In a high-speed blender, combine all ingredients: almond flour, eggs, banana, spinach, Greek yogurt, vanilla, maple syrup (if using), and baking powder. Blend until smooth and fully combined.
  3. Cook waffles – Pour batter into a preheated waffle iron and cook according to manufacturer’s instructions, usually 3–5 minutes, until waffles are set and lightly golden.
  4. Cool & serve – Let cool slightly before serving. Enjoy plain or with your favorite toppings like yogurt, nut butter, or fruit!

Hint: To get the smoothest texture, blend the spinach and banana with the yogurt and eggs first, then add the dry ingredients. This helps break down the spinach evenly without over-blending the almond flour.

Substitutions

  • almond flour → use oat flour (about ¾ cup) for a nut-free version (texture will vary)
  • eggs → sub with flax or chia eggs, or egg replacement
  • greek yogurt → sub with dairy-free yogurt or even unsweetened applesauce
  • avocado oil → swap for melted butter, olive oil, or coconut oil
  • maple syrup (optional) → can sub with honey or date syrup, skip for younger toddlers (< 2yo)

These are naturally gluten-free if using gluten-free rolled oats!

Variations

  • berry boost – add a handful of blueberries into the batter after blending
  • peanut butter – top with peanut butter and a drizzle of honey or maple syrup
  • chocolate chip – add a handful of chocolate chips into the batter after blending

Storage

Refrigerator: Store in an airtight container for up to 4 days.

Freezer: Freeze waffles between parchment sheets for up to 2 months. Toast or reheat in the microwave as needed.

Call them “Hulk Waffles” “Peter Pan Waffles” “Grinch Breakfast” or “Shrek Waffles” to get your toddler excited! They’ll love the bright green color, and you’ll love sneaking in a veggie-rich breakfast.

FAQ

Can I make these dairy-free?

Yes! Just swap the Greek yogurt for a thick, dairy-free yogurt like almond or coconut-based.

Can I make them egg-free?

Almond flour needs eggs for structure, but you can try using 2 flax eggs—note the texture will be softer.

Can I turn these into pancakes?

Yes! The batter works great on a griddle too—just cook like you would regular pancakes.

How can I make these nut-free?

Sub with 1 cup of rolled oats (to blend in). Note: Oat flour is more absorbent, so the waffles may be slightly denser. If the batter seems too thick, add 1–2 tablespoon milk to thin it slightly.
