Ingredients
  

  • 1 cup almond flour
  • 2 eggs
  • 1 ripe banana
  • 1 cup fresh spinach
  • ¼ cup plain Greek yogurt
  • 1 teaspoon vanilla extract
  • ½ teaspoon baking powder
  • 2 tablespoon maple syrup or honey optional

Instructions
 

  • Preheat waffle iron – Lightly grease if needed.
  • Blend ingredients – In a high-speed blender, combine all ingredients: almond flour, eggs, banana, spinach, Greek yogurt, vanilla, and baking powder. Blend until smooth and fully combined.
  • Cook waffles – Pour batter into a preheated waffle iron and cook according to manufacturer’s instructions, usually 3–5 minutes, until waffles are set and lightly golden.
  • Cool & serve – Let cool slightly before serving. Enjoy plain or with your favorite toppings like yogurt, nut butter, or fruit!
