Ingredients

  • pumpkin seeds
  • dates
  • Tiny Sprouts Digestion Booster (use code TIFF10 for 10% off)
  • seed/nut butter
  • cinnamon

See recipe card for quantities.

Instructions

  1. Step 1: Add ingredients – Add pumpkin seeds, dates, Tiny Sprouts Digestion Booster, nut/seed butter, and cinnamon to a food processor.
  1. Step 2: Blend ingredients – Blend until the mixture becomes sticky and holds together when pressed.
  1. Step 3: Press into a pan – Line an 9×5 or 8×8-inch baking dish with parchment paper and press the mixture firmly into an even layer.
  1. Step 4: Slice & enjoy – Refrigerate for at least 20 minutes to firm up. Cut into 8-12 bars and store as needed.

Hint: For the best texture, soak the dates in warm water for 5 minutes before blending. This softens them and helps everything bind together easily!

Substitutions

These bars are already gluten-free, dairy-free, egg-free, and nut-free (if using sunflower seed butter)!

  • pumpkin seeds → swap for sunflower seeds, almonds, or cashews
  • sunbutter → swap almond butter, peanut butter, or tahini
  • Tiny Sprouts Digestion Booster → Tiny Sprouts Brain Booster

Honestly just find whatever nut/seed butter, nuts/seeds, and dates you have on hand! They should all work fairly similarly.

Variations

There are SO many ways you can change the flavor of these!

  • chocolate chips – stir in mini chocolate chips or drizzle with melted chocolate
  • berry bliss – add dried cranberries, blueberries, or freeze-dried strawberries for a fruit twist
  • coconut crunch – add coconut shreds
  • apple cinnamon – add ¼ cup dried apple pieces and a dash more cinnamon for a cozy fall flavor

Equipment

Fun fact…I randomly discovered I had a food processor in a storage closet for the past FIVE YEARS! Y’all…it’s life changing, here’s the food processor. You’ll also need a loaf or square pan to press the bars into.

Storage

Store in an airtight container for up to 1 week. Freeze in a sealed bag for up to 3 months. Let thaw at room temp before eating (if frozen).

Tiff Tip

For bite-sized toddler snacks, roll the mixture into small energy balls instead of bars! They’re easier for little hands to grab, perfect for on-the-go snacking, and a fun way to introduce new textures.

FAQ

Can I make these nut-free?

Yes! This recipe is already nut-free since it uses pumpkin seeds and sunbutter instead of nuts.

What if my mixture isn’t sticking together?

Try adding 1-2 teaspoon of water or an extra date to help it bind better.

Can I add other flavors?

Absolutely! Mix in a pinch of sea salt, vanilla extract, or mini chocolate chips for variety or see the variations section for more ideas!
