In a bowl, whisk together the eggs and milk until completely smooth.
Add the flour (and vanilla if using) and whisk until the batter is thin and lump-free.
Let the batter rest for about 5 minutes.
Heat a lightly greased nonstick skillet over medium-low heat. Pour about 3-4 tablespoons of batter into the pan and immediately swirl to spread into a thin layer. Cook for 60-90 seconds, flip, and cook another 20-30 seconds. Repeat with remaining batter.
