  • 2 large eggs
  • 1 cup fresh spinach
  • 2-3 tablespoon oats or oat flour

Instructions
 

  • Add eggs, spinach, and oats to a blender. Blend until smooth and bright green.
  • Heat a nonstick skillet over medium and lightly grease. Pour in the batter and swirl to form a thin circle (like a tortilla).
  • Cook for 2–3 minutes until set, flip carefully, and cook 1–2 more minutes.
  • Let cool slightly before filling and serving.
