Banana Zucchini Muffins for Toddlers (simple, no added sugar)

Ingredients
  

  • 2 ripe bananas mashed
  • 1 cup finely grated zucchini squeezed of excess moisture
  • 2 eggs
  • ¼ cup melted coconut oil or butter
  • 1 teaspoon vanilla extract
  • 1 cup flour all-purpose or oat flour
  • ½ cup rolled oats
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon cinnamon
  • pinch of salt
  • optional: 2 tablespoon chia seeds
  • optional: 2-3 tablespoon milk if batter is too thick

Instructions
 

  • Preheat oven to 350°F and line a muffin tin with liners or grease well.
  • In a mixing bowl, mash bananas until smooth. Stir in zucchini (squeezed dry), eggs, oil, and vanilla.
  • Add flour, oats, baking soda, baking powder, cinnamon, and salt. Mix until just combined.
  • If batter feels too thick, add 2-3 tablespoon milk to loosen slightly. Scoop batter evenly into muffin tin.
  • Bake for 25-30 minutes, until centers are set and tops are lightly golden. Let cool before serving.
