Ingredients
  

  • 2 ripe bananas mashed
  • 1 cup rolled oats
  • ½ cup finely shredded zucchini squeezed dry
  • 1 egg
  • ¼ cup milk of choice
  • 1 tablespoon melted coconut oil or olive oil
  • 1 teaspoon vanilla extract
  • ½ teaspoon cinnamon
  • ½ teaspoon baking powder

Instructions
 

  • Preheat oven to 350°F and line an 8×8 pan with parchment paper.
  • In a bowl, mash bananas until smooth, then stir in egg, milk, oil, and vanilla.
  • Fold in oats, zucchini, cinnamon, and baking powder until just combined.
  • Pour batter into pan, smooth the top, and bake 25-30 minutes until the center is set. Cool completely before slicing.
