Warm the waffle maker.
In a high-speed blender, combine all ingredients: oats or almond flour, eggs, banana, spinach, Greek yogurt (if using), vanilla, and baking powder. Blend until smooth and fully combined.
Pour batter into a preheated waffle iron and cook according to manufacturer’s instructions, usually 3–5 minutes, until waffles are set and lightly golden.
Let cool slightly before serving. Enjoy plain or with your favorite toppings like yogurt, chia jam, nut butter, or fruit!
