  • If your dates are firm, soak them in warm water for 5-10 minutes, then drain.
  • Add dates, almond butter, oats, and pumpkin pie spice to a food processor.
  • Blend until a sticky dough forms. Fold in finely shredded carrots.
  • Roll into small bite-sized balls (about 1-2 tablespoons each).
  • Place on a plate or tray and chill for 15-20 minutes to firm up.

Notes
  • Dough should be soft but not super sticky, adjust as needed:
    • too sticky - add 1-2 tablespoon oats
    • too dry - add 1-2 more dates or splashes of water
