Ingredients
  

  • 1 10-12 oz bag frozen cauliflower rice cooked and squeezed very dryabout 1½-2 cups
  • 6 large eggs
  • ½ cup cottage cheese
  • ¼ cup milk of choice
  • ¾ cup shredded cheese
  • ¼ cup flour oat flour, all-purpose, or GF 1:1
  • ½ teaspoon garlic powder & pinch of salt optional

Instructions
 

  • Preheat oven to 375°F and grease or line an 8×8 or 9×9 baking dish.
  • Mix or blend eggs, cottage cheese, milk, flour, and optional seasonings until smooth together in a bowl or blender.
  • Stir in cauliflower rice and shredded cheese.
  • Pour into prepared pan and bake for 30-35 minutes, until the center is set. Cool for a few minutes, then cut into bars.
