These no-bake Chickpea Cookie Dough Bars are soft, chewy, naturally sweetened with dates, and packed with fiber and healthy fats. Made with simple pantry ingredients, they're an easy toddler-friendly snack that's perfect for lunchboxes, meal prep, or a healthy treat.

Chickpea Cookie Dough Bars

Ingredients
  

  • 1 15-ounce can chickpeas, drained, rinsed, and patted dry
  • ½ cup creamy nut butter or sunflower seed butter peanut, almond, cashew, or SunButter
  • 6 pitted, soft Medjool dates soak for 5-10 minutes if dry, or 2-3 tablespoon of maple syrup
  • 2 teaspoons vanilla extract
  • pinch of salt
  • ½ cup oat flour more depending consistency preference
  • ½ cup mini chocolate chips optional!

Instructions
 

  • Line an 8×8-inch baking pan with parchment paper. Rinse chickpeas well and lightly pat dry.
  • Add the chickpeas, nut or seed butter, dates, vanilla, salt, and oat flour to a food processor. Blend until completely smooth, stopping to scrape down the sides as needed.
  • Fold in the mini chocolate chips or whatever mix-ins, if adding.
  • Transfer the mixture to the prepared pan and press firmly into an even layer. Sprinkle additional chocolate chips over the top if desired and gently press them in.
  • Refrigerate for at least 1-2 hours, or until firm. Slice into bars and enjoy!
