Chickpea Energy Bites (Sugar Cookie Flavor)

These chickpea energy bites have a soft sugar cookie flavor and are made with simple ingredients like chickpeas, dates, oats, and cashew butter. A high fiber, no added sugar snack that’s perfect for toddlers!

Equipment

Ingredients
  

  • 1 can chickpeas drained + rinsed
  • cup cashew butter or any nut/seed butter will work
  • ½ cup soft Medjool dates about 4-6
  • cup oats add more depending texture
  • 1 teaspoon vanilla extract
  • ½ teaspoon almond extract
  • pinch of salt

Instructions
 

  • If needed, soak dates in warm water for 5-10 minutes until soft.
  • Add chickpeas, dates, cashew butter, vanilla extract, almond extract, and salt to a blender or food processor. Blend until smooth.
  • Add oat flour and blend again until a soft dough forms.
  • Chill dough for 20-30 minutes, then roll into balls or add sticks to make cake pops.

Notes
  • Blend thoroughly before adding oat flour for the smoothest texture. Dough should be soft but not sticky, adjust as needed:
    • too sticky - add 1-2 tablespoon oats
    • too dry - add 1-2 more dates or splashes of water
  • Chill time helps make rolling much easier.
