Yogurt Cheesecake Base

  • 2 cups plain Greek yogurt
  • 4 large eggs
  • ¼ cup oat flour or all-purpose
  • 2-4 tablespoon maple syrup optional
  • 1 teaspoon vanilla extract
  • ½ teaspoon cinnamon

Cinnamon Roll Swirl

  • 1 tablespoon maple syrup
  • 1-2 teaspoon coconut sugar
  • 1-1½ teaspoon cinnamon
  • 1-2 teaspoon water as needed to thin

Instructions
 

  • Preheat the oven to 350°F and line an 8×8 baking pan with parchment paper.
  • Add the Greek yogurt, eggs, oat flour, maple syrup (if using), vanilla extract, and cinnamon to a blender. Blend until completely smooth.
  • Pour the yogurt batter into the prepared pan and smooth the top.
  • In a small bowl, mix the maple syrup, coconut sugar, cinnamon, and a splash of water until pourable.
  • Spoon the cinnamon mixture over the batter and gently swirl with a knife or skewer.
  • Bake for 35-45 minutes, or until the center is just set.
  • Allow the bars to cool completely, then refrigerate for at least 2 hours before slicing into bars. Or enjoy warm topped with maple syrup or whipped cream!

Notes
