Coconut Banana Energy Bites "Snowballs" (No Added Sugar)

These soft, no-bake Snowball Coconut Banana Energy Bites are naturally sweetened, toddler- and baby-friendly, and made with just a few simple ingredients. The perfect quick snack for winter, lunchboxes, or on-the-go!

Ingredients
  

  • 1 cup oats rolled or quick
  • 1 mashed banana
  • cup cashew butter or other nut/seed butter
  • 1 teaspoon vanilla extract
  • 1 tablespoon chia seeds or hemp seeds
  • ½ cup shredded coconut extra if needed

Instructions
 

  • Mash the banana in a medium-size bowl.
  • Add all the remaining ingredients in the bowl and mix together.
  • Roll into small toddler-sized balls (about 1 tablespoon each). Coat each ball in shredded coconut.
  • Chill in the fridge for 20 minutes to firm up.
