Cottage Cheese Protein Pancakes (just 3 simple ingredients, no egg)

These cottage cheese protein pancakes are soft, fluffy, and made with just 3 simple ingredients! Literally just pancake mix, milk, and cottage cheese. No eggs needed! They’re high in protein, toddler-approved, and perfect for busy mornings.

Equipment

Ingredients
  

  • 1 cup pancake mix or 1 cup flour + 1 teaspoon baking powder
  • ½ cup cottage cheese
  • ¾ cup milk of choice 2-4 more tablespoon if needed depending batter thickness
  • butter or oil for greasing the pan

Instructions
 

  • In a bowl, whisk together cottage cheese and milk until mostly smooth.
  • Stir in pancake mix until just combined, don’t overmix. If batter gets thick then add 1-2 tablespoon more of milk (consistency differs with pancake mixes).
  • Heat a greased nonstick skillet or griddle over medium heat.
  • Pour about ¼ cup of batter for each pancake (or use a cookie scoop) and cook 2-3 minutes per side, until golden and fluffy.
  • Serve warm with fruit, yogurt, or a drizzle of nut butter or maple syrup.
