This easy Cottage Cheese Queso is a creamy, high-protein dip made with just 4 simple ingredients! Blended cottage cheese with cheddar cheese and taco seasoning. Then Rotel for a restaurant-style queso that's perfect with chips, veggies, tacos, and more.
Add the cottage cheese, shredded cheese, and taco seasoning to a blender. Blend until completely smooth.
Pour the mixture into a small saucepan over medium-low heat. Stir frequently for 2-5 minutes (or pop in the microwave for 30-45 seconds), until the cheese is melted and the queso is warm and creamy.
Remove from the heat and stir in the Rotel. Stir in a few splashes of milk depending thickness preference!
Serve immediately with tortilla chips, veggies, pretzels, or drizzle over tacos, nachos, burrito bowls, and roasted potatoes.
DIY Salt-Free Seasoning option: 1 teaspoon chili powder, ½ teaspoon cumin, ½ teaspoon garlic powder, ¼ teaspoon onion powder, ¼ teaspoon smoked paprika, and a pinch of black pepper.
Blend the cottage cheese until completely smooth for the creamiest texture.
Use freshly shredded cheese for the best melt.
Mild Rotel adds that classic queso flavor, but feel free to omit.
If your queso thickens after sitting, simply stir while reheating. If needed, add a splash of milk to thin it back out.
Store leftovers in the refrigerator for up to 4 days. Just warm when ready to serve!
