  • 1 cup pitted Medjool dates about 10–12
  • ½ cup canned coconut milk full-fat for best texture
  • 1 teaspoon vanilla extract optional but delicious

Instructions
 

  • If your dates are firm or dry, soak them in warm water for 5–10 minutes, then drain well.
  • Add dates, coconut milk, and vanilla extract to a blender or food processor.
  • Scrape down the sides as needed until smooth. Add a splash more coconut milk if you want a thinner caramel.
  • Transfer to a glass jar and refrigerate for up to 1 week, or freeze for up to 2 months.
