This easy chickpea cookie dough is a no-bake, high-protein snack that tastes just like dessert! Made with chickpeas, nut butter, and dates or maple syrup, it’s soft, naturally sweet, and perfect for toddlers, kids, or moms craving a healthy treat.

Ingredients
  

  • 1 15 oz can chickpeas drained + rinsed
  • ½ cup sunflower seed butter or other nut/seed butter (cashew & almond work well here!)
  • 2 teaspoon vanilla extract add more to taste
  • 6 Medjool dates soaked + pitted (or ¼ cup pure maple syrup)
  • 2-4 tablespoon water or milk as needed for blending
  • pinch of salt
  • ½ cup mini chocolate chips regular or dairy-free

Instructions
 

  • Add chickpeas, sunbutter, vanilla, and dates (or maple syrup) to a food processor.
  • Blend until smooth, adding water 1 tablespoon at a time until creamy. Scrape down the sides as needed.
  • Stir in chocolate chips (or skip for baby-safe version).
  • Enjoy right away or chill for 30 minutes for thicker texture. Store in the fridge or freezer for easy snacks.
