Ingredients
  

  • 1 10 oz box orzo
  • 1 cup finely grated zucchini
  • 1 cup finely grated carrot
  • 3 cups chicken bone broth ideally low-sodium or no salt added for littles under 12mo
  • 2 tablespoon butter or olive oil
  • ½-1 cup grated parmesan depending on taste preference
  • pinch garlic powder optional

Instructions
 

  • Melt butter in a large pot over medium heat. Add dry orzo and toast for 2-3 minutes, stirring often, until lightly golden.
  • Stir in grated zucchini and carrot. Cook for 1-2 minutes to soften.
  • Pour in chicken bone broth and optional garlic powder. Stir to combine.
  • Bring to a gentle boil, then reduce heat and simmer uncovered for 10-12 minutes, stirring occasionally.
  • Once orzo is tender and creamy, stir in parmesan until melted. Add a splash of broth or water if needed.
