Easy Sheet Pan Protein Pancakes (with Greek yogurt)

These easy sheet pan pancakes for toddlers are made with pancake mix, eggs, and Greek yogurt for a soft, fluffy breakfast that bakes all at once. No flipping required! Perfect for busy mornings, meal prep, and toddler-friendly pancake sticks.

Easy Sheet Pan Protein Pancakes (with Greek yogurt)

Ingredients
  

  • 2 cups pancake mix
  • 2 eggs
  • 1 cup plain Greek yogurt
  • ½ cup milk more if needed (depending on pancake mix)
  • 2 tablespoon melted butter or oil
  • 1 teaspoon vanilla extract optional
  • ½ cup blueberries optional for topping

Instructions
 

  • Preheat oven to 375°F (190°C) and line a 9×13 baking pan with parchment paper.
  • In a large bowl whisk together eggs, Greek yogurt, milk, melted butter, and vanilla extract.
  • Add pancake mix and stir until just combined. The batter should be thick like muffin batter but spreadable. If it's too thick then add 1-3 tablespoon more of milk until consistency is spreadable.
  • Spread batter evenly into the prepared baking pan. Add optional toppings like berries or chocolate chips if desired (toss in flour before adding to help prevent sinking).
  • Bake for 18-22 minutes, or until the center is set and lightly golden.
  • Let cool slightly before slicing into squares or strips for easy toddler serving.

*no pancake mix?! you can substitute it by using 2 cups of all-purpose flour (gluten-free if needed) and adding 2 teaspoons of baking powder + ½ teaspoon baking soda + ¼ teaspoon of salt!
