Frozen Yogurt Berry Ice Cream Sandwiches – Easy Snack for Kids & Toddlers

Equipment

  • rectangle glass container or baking sheet
  • knife
  • parchment paper (optional)

Ingredients
  

  • 1 ½ cup Greek yogurt plain or vanilla
  • 1 ½ cup whipped cream dairy-free if needed
  • ½ teaspoon vanilla extract
  • 1-1 ½ cup fresh berries blueberries, strawberries, raspberries, etc. (adjust based on the ratio you prefer)
  • 8 full sheets graham crackers broken in half (to make 16 squares), gluten-free if needed
  • 2 tablespoon Tiny Sprouts hemp hearts optional, for topping

Instructions
 

  • In a medium bowl, stir together Greek yogurt, whipped cream, and vanilla extract until smooth. Gently fold in chopped berries.
  • Line a tray with parchment paper. Arrange graham cracker halves. Spoon the yogurt mixture over and spread evenly. Sprinkle with hemp hearts, then top with the remaining graham crackers to form sandwiches.
  • Place tray in freezer for 2-3 hours, or until the sandwiches are firm. Can set overnight and let thaw for 5-10 minutes prior to eating.
  • Once firm, cut sandwiches into squares. Serve immediately or store in airtight container in the freezer for later.
