Healthy Mini Pizzas for Kids (using Greek yogurt dough!)
These healthy mini pizzas for kids are made with an easy Greek yogurt pizza dough for a soft, toddler-friendly crust that’s perfect for lunch, dinner, or freezer-friendly meal prep. No yeast required and easy to customize for picky eaters.
toppings of choice: finely chopped bell peppers, mushrooms, spinach, turkey pepperoni, shredded chicken, sausage, olives, etc.

Preheat your oven to 400°F and line a baking sheet with parchment paper. In a large bowl, whisk the all-purpose flour, baking powder, salt, and Italian seasoning.
Then add the Greek yogurt and mix until a dough forms.
Transfer the dough to a lightly floured surface and knead for 3-5 minutes until smooth. If it feels sticky, sprinkle in a little extra flour as needed.
Roll out the dough and flatten until ¼-inch thick (or however thick you prefer), then use a small mason jar or cookie cutter to cut out the mini pizza rounds.
Place the mini pizza crusts onto parchment-lined baking sheet, then spread each mini pizza with marinara sauce, sprinkle with mozzarella cheese, and add your favorite toppings.
Bake the mini pizzas for about 15-20 minutes or until lightly golden.
Storage: Store leftovers in an airtight container in the fridge for up to 3 days. Freeze fully cooled mini pizzas individually for up to 2 months.
