Soft, healthy sweet potato blondies made with simple ingredients and no flour. These toddler-friendly bars are easy to make, naturally sweetened, and perfect for snacks or meal prep.

Healthy Sweet Potato Blondies (no flour, easy, toddler-friendly)

Equipment

  • measuring cups and spoons
  • spatula
  • 8x8 baking dish

Ingredients
  

  • 1 cup mashed sweet potato
  • 2 eggs
  • 2-4 tablespoon maple syrup depending how sweet you want them!
  • ½ cup almond butter or any nut butter you'd like!
  • teaspoon vanilla extract
  • ¼ teaspoon baking soda
  • pinch of salt
  • ⅓-½ cup chocolate chips

Instructions
 

  • Preheat oven to 350°F and line an 8x8 baking pan with parchment paper.
  • In a mixing bowl, combine mashed sweet potato, eggs, maple syrup, almond butter, and vanilla. Stir until smooth. You can even blend the batter if you'd like it extra smooth!
  • Add baking soda and salt, then mix again. Fold in chocolate chips.
  • Spread batter evenly into the pan and bake for 20-25 minutes, until edges are set and the center is slightly soft.
  • Let cool completely before slicing into bars.
