In a bowl, stir together the Greek yogurt, berries (make sure to mash some), chia seeds, and a dash of vanilla until fully combined. Add honey if you're wanting them a bit more sweet. You'll end up with a thick, vibrant berry-pink mixture.
Set the bowl aside for 5 minutes. This gives the chia seeds time to absorb and swell slightly, which improves the final texture. Then start dolloping on parchment lined sheet pan or scoop into a popsicle mold.
Sprinkle a small amount of rolled oats, granola, or hemp hearts on top of the yogurt mixture in each glob or mold and press down lightly. Once frozen and flipped out, this becomes a satisfying little crust on the bottom, like the base of a yogurt parfait! Insert your popsicle sticks and freeze for at least 4 hours, or overnight.
Once frozen, pull away from parchment paper or run warm water over the outside of the mold for 10-15 seconds and they'll release easily. Serve right away or transfer to a zip-lock freezer bag for storage.
