  • 3 cups frozen peaches
  • 1 cup full-fat cottage cheese or sub with full-fat yogurt
  • 2 tablespoon maple syrup or 2-4 Medjool dates for no added sugar
  • 2 teaspoon vanilla extract or vanilla bean paste
  • pinch sea salt
  • 1-2 tablespoon whole milk if needed for blending

Instructions
 

  • Add the frozen peaches, cottage cheese, maple syrup or dates, vanilla, and salt to a high-powered blender or food processor.
  • Blend until completely smooth and creamy, scraping down the sides as needed.
  • Enjoy immediately for a soft-serve consistency or transfer to a freezer-safe container. Freeze for 2-4 hours for a firmer, scoopable ice cream texture.
  • Let sit at room temperature for 10-15 minutes before scooping if frozen solid.
