Equipment

Ingredients

  • 1 cup creamy peanut butter
  • ½ cup coconut flour or 1 cup of oat flour
  • 1 teaspoon vanilla extract
  • 2 tablespoon maple syrup or honey optional, can add more for added sweetness

Instructions

  • In a medium bowl, stir together peanut butter, vanilla, and maple syrup/honey (if using) until smooth.
  • Add coconut flour and mix well. The mixture will thicken quickly. If it's too doughy then add 1 tablespoon of flour at a time until desired consistency is reached, and if it feels too dry then add a little more peanut butter.
  • Press the dough into a parchment-lined small dish or loaf pan. Can even roll into balls!
  • Freeze or stick in the fridge for about an hour, then slice into bars or toddler-friendly squares.

Other flour option: I've also made these using ½ cup quick oats (or pulsed rolled oats) + ½ cup almond flour or 1 cup oat flour per 1 cup nut butter ratio! Adjust based on consistency of nut butter.
