This easy pumpkin frozen yogurt bark is made with creamy Greek yogurt, pumpkin purée, vanilla, and warm pumpkin spice. Add your favorite toppings, freeze, and break into pieces for a fun, kid-friendly fall snack or dessert!
Add the Greek yogurt, pumpkin purée, vanilla , pumpkin pie spice or cinnamon, and optional maple syrup to a medium mixing bowl. Stir until smooth and evenly combined.
Line a small baking sheet or freezer-safe dish with parchment paper. Spread the pumpkin yogurt mixture into an even layer about ¼-½ inch thick.
Drizzle the peanut or seed butter over the yogurt mixture. Sprinkle with hemp hearts, mini chocolate chips, or your favorite toppings.
Place the pan flat in the freezer for about 3-4 hours, or until completely firm.
Lift the frozen yogurt bark from the parchment paper and break or cut it into pieces. Let soften slightly before serving, especially for younger children.
For a no-added-sugar version, simply omit the maple syrup. You can also add a little mashed ripe banana for natural sweetness.For a dairy-free version, substitute a thick dairy-free yogurt. A thick coconut-based yogurt works particularly well.For a nut-free version, use sunflower seed butter instead of peanut or nut butter, or leave the drizzle off completely.Regular yogurt can be substituted for Greek yogurt, but because it contains more water, the frozen bark may have a slightly icier texture.Feel free to customize the toppings with granola, chopped fruit, chia seeds, pumpkin seeds, crushed graham crackers, chopped nuts, or an extra sprinkle of cinnamon.Scroll up to see substitution options.
