These savory sweet potato waffles are made with no flour, simple ingredients, and work perfectly as toddler-friendly waffle buns for burgers, sandwiches, or quick meals.
Preheat mini waffle maker and grease well. In a bowl, mix mashed sweet potato, eggs, cheddar cheese, garlic powder, onion powder, and salt until combined.
Add about 2-3 tablespoons of batter to the waffle maker and spread slightly. Cook for 4-6 minutes (depending waffle maker), or until the waffle is set and lightly golden.
Carefully remove and let cool on cooling rack for 1-2 minutes. Waffles will firm up as they sit.
Repeat with remaining batter. Use 2 mini waffles as a burger bun, sandwich bun, or serve as-is.
Cook these longer than traditional waffles so they hold together well. Avoid opening the waffle maker too early or they may split.
