These Spinach Egg Bites are a high-protein, veggie-packed breakfast that’s toddler-approved and freezer-friendly. Made with eggs, spinach, and cottage cheese. They’re soft, flavorful, and the perfect grab-and-go option for busy mornings.

Equipment

Ingredients
  

  • 8 large eggs
  • 1 cup cottage cheese
  • 1 cup fresh spinach one handful
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon black pepper
  • ½ cup mix-ins of choice (optional) shredded cheese of choice (cheddar, mozzarella, or feta work well), chopped veggies, or diced breakfast meat

Instructions
 

  • In a blender, combine the eggs, cottage cheese, spinach, garlic powder, onion powder, and pepper until smooth. (Or whisk by hand for a chunkier texture.)
  • Stir in shredded cheese and any optional add-ins like cooked sausage, bacon, or extra veggies.
  • Grease or line a muffin tin and fill each cup about ¾ full. Bake at 350°F for 12-15 minutes for mini bites and 18–22 minutes for regular size bites, until the egg bites are set.
  • Let cool for a few minutes before removing from the tin. Serve warm, or store for later.
