Strawberry Energy Bites (high fiber snack for toddlers)

These strawberry energy bites are a high-fiber, no-bake snack for toddlers made with oats, cashew butter, freeze-dried strawberries, and Tiny Sprouts. Soft, cake-pop style, and picky-eater friendly.
1-3tablespoonapplesauce or wateroptional, as needed if they're dry
2-4tablespoonhoney or maple syrupoptional for sweetness
optional coating
½cupplain or vanilla Greek yogurt
1-2tablespoonmelted coconut oil
1-2teaspoonhoney or maple syrupoptional for sweetness

Instructions
Add the quick oats, cashew butter, freeze-dried strawberry powder, Tiny Sprouts, and vanilla extract to a mixing bowl or food processor. Mix or pulse until a thick, moldable dough forms. Add applesauce or water or more nut butter 1 tablespoon at a time if needed to help the mixture come together.
Scoop about 1-2 tablespoons of dough and roll into balls. Place on parchment paper and refrigerate for 20-30 minutes to firm.
Insert cake-pop or lollipop sticks into the chilled balls, gently pinching the dough around the stick to secure.
If using the coating, whisk the yogurt and melted coconut oil. Dip the pops, let excess drip off, and refrigerate for 30-45 minutes until set.
