Instructions

  • Peel the bananas and cut each one in half crosswise. Carefully insert a popsicle stick into the cut end of each banana half.
  • Place the bananas on a parchment-lined baking sheet or plate and freeze for about 20-30 minutes to firm up. This makes them easier to coat.
  • In a small bowl, mix together the Greek yogurt, pumpkin purée, vanilla extract, pumpkin pie spice or cinnamon, and maple syrup, if using.
  • Dip each banana into the pumpkin yogurt mixture, using a spoon to help evenly coat the outside. Allow any excess coating to drip off, then return to the parchment-lined pan.
  • Add two mini chocolate chips to each banana for the eyes. Slightly warm the peanut butter until thin enough to drizzle, then drizzle it back and forth over each banana to create the mummy "wraps."
  • Freeze for about 1 hour, or until the yogurt coating is firm. Let the banana pops soften slightly before serving, especially for younger children.

Notes

For a no-added-sugar version, simply omit the maple syrup. The bananas provide plenty of natural sweetness.
Use bananas that are ripe but still firm. Overripe bananas can become too soft to stay securely on the popsicle sticks.
For a dairy-free version, use a thick dairy-free yogurt in place of Greek yogurt.
For a peanut- or nut-free version, use sunflower seed butter or another tolerated seed butter for the mummy drizzle.
Freshly mixed pumpkin yogurt should be fairly thick. If your coating seems too thin, add a little more Greek yogurt.
Frozen bananas can become quite firm. For younger children, allow the pops to soften before serving and modify them into an appropriate size and texture based on your child's eating skills.
Store leftover banana pops in an airtight freezer-safe container for up to 1 week for the best texture.
