Peanut Butter Date Bars

These peanut butter date bars are an easy no bake snack made with oats, dates, and peanut butter. Naturally sweet, soft, and perfect for toddlers.

Ingredients
  

  • 1 cup oats
  • 1 cup pitted dates
  • ½ cup peanut butter
  • 1 teaspoon vanilla extract optional
  • 1-2 tablespoon chia seeds or flax seeds optional

Instructions
 

  • If your dates are dry, soak them in warm water for 5-10 minutes, then drain.
  • Add oats, dates, peanut butter, and vanilla (if using) to a food processor.
  • Blend until the mixture is combined and sticks together when pressed.
  • Transfer to a lined dish and press firmly into an even layer.
  • Refrigerate for 30-60 minutes until firm, then slice into bars or squares.
