- vanilla extract (optional) – adds a subtle flavor boost

How to Make Your Peanut Butter Date Bars

- Step 1: If your dates are dry, soak them in warm water for 5-10 minutes, then drain.

- Step 2: Add dates, peanut butter, and vanilla (if using) to a food processor. Blend until the mixture sticks together, then add oats in to pulse and mix.

- Step 3: Transfer to a lined dish and press firmly into an even layer.

- Step 4: Refrigerate for at least 30-60 minutes until firm. Cut into bars or squares and enjoy.
Hint for the Best Peanut Butter Date Bars
Press the mixture down firmly into the pan so the bars hold together well after chilling. If your toddler isn't a fan of texture, then I'd try to blend the oats as much as possible or even sub with oat flour!
Substitutions
These peanut butter date bars are super flexible, so you can easily adjust based on what you have on hand or your toddler’s needs:
- peanut butter – swap with almond butter or sunflower seed butter for a nut-free option
- oats – rolled oats or quick oats both work; quick oats will give a slightly softer texture
- dates – medjool dates work best for softness, but any pitted dates can work if softened first
This recipe is really forgiving, so don’t stress about making it exact. Use what you have and adjust as needed!
Variations
Here are a few ways you can change these peanut butter date bars up:
- add mini chocolate chips
- mix in chia seeds or flaxseed
- sprinkle in cinnamon
- drizzle with melted chocolate
- roll into energy bites instead of bars

Equipment
You’ll need a food processor to blend everything together, along with a small baking dish or container to press the mixture into. Lining the dish with parchment paper makes it easier to remove and slice.
Storing Your Peanut Butter Date Bars
Store these peanut butter date bars in an airtight container in the fridge for up to 5 days. You can also freeze them for longer storage and thaw as needed.

with added chia seeds for extra fiber + omega-3s!
Tiff's Dietitian Tip
These bars are naturally sweetened with dates, which provide fiber and minerals. Most snack bars in the store tend to have added sugars and sometimes even as much as a candy bar!
Just a reminder to check those nutrition facts labels where it says "added sugar" and ideally keep below 5 grams if possible.
FAQ
A food processor works best for texture, but you could mash very soft dates and mix by hand if needed.
Yes! Store in a freezer-safe container and thaw before serving.
